Danny Polise

Danny Polise is the COO and founder of Penelope Bourbon. In his role, Polise oversees the blending and operations of the business - from compliance to managing production and inventory.
Upon graduating college, Polise opened the East End Bar and Grill which has become a fixture in the Upper East Side. Most recently, Polise worked at his family’s consulting company where he was a licensed engineer and partner responsible for business operations and client relations.
Danny attended Manhattan College where he earned his bachelor's degree in Mathematics and Mechanical Engineering.
He currently resides in Watchung, New Jersey with his family.
